Easter Egg Hunt Key Lime Cupcakes
Recently, I noticed new seasonal items from Pillsbury at my local Target store. The one item that really caught my eye was the key lime cake mix. Lime is one of my favorite flavors and I've always been a big Pillsbury fan so I knew I had to try them. I decided to make Easter themed key lime cupcakes!
You will need:
1 cup of water
1/2 cup of oil
3 eggs
Pillsbury Key Lime Premium Cake Mix
Pillsbury Key Lime Creamy Supreme Frosting
Cadbury Mini Eggs: Milk Chocolate
Cupcake liners of choice
Directions:
Set oven to 350°F. Place cupcake liners in muffin/cupcake pan. This recipe makes 24 cupcakes so you'll need to line 2 muffin/cupcake pans with cupcake liners. I used cute pastel cupcake liners in light blue, light pink, and light yellow.
Combine cake mix, water, oil, and eggs in a large mixing bowl. Mix until all of the ingredients are combined. The mixture will turn from white powder to a green batter while mixing. Bake at 350°F for 19-23 minutes. Let cupcakes cool completely before decorating!
Once cupcakes have cooled, spoon Pillsbury Key Lime Creamy Supreme frosting into a piping bag or a ziplock black. If using a piping bag, choose the smallest nozzle available. If using a ziplock bag, push all of the icing to one corner and cut a very small amount of the corner off. Squeeze the frosting onto the cupcakes in short line motions to create a grass look. Place 1-3 Cadbury Mini Eggs on top of your cupcakes to resemble Easter eggs in the grass.
Serve and enjoy! These cupcakes were absolutely delicious! They are not as sweet as most cupcakes because the lime gives them a wonderful tangy taste. They're perfect for springtime and they look so cute and festive for Easter.
